Kale Salad with Lemon Yogurt Dressing

Kale Salad

A CxRA favorite, now you can make one of our most popular salads at home.  Your friends and family will thank you (and we won’t take any credit…promise).


  • 2 heads green kale
  • 3 Tblsp toasted pine nuts
  • 4 Tblsp golden raisins
  • 2 oz. shaved parmesan cheese

Dressing – Yields approximately 1 cup

  • 1 oz. fresh lemon juice
  • 1 oz. white wine vinegar
  • 2 oz. Greek yogurt
  • 2 oz. Extra Virgin olive oil
  • Zest of 1 lemon
  • 1 tsp of roasted garlic and shallot puree
  • 1 tsp Dijon mustard
  • Salt & Pepper to taste


  • To make dressing, combine all ingredients and whip together with a whisk. Season with salt and pepper to taste. Keep refrigerated until ready to use
  • Cut, wash and dry kale. Mix all ingredients in a bowl with dressing and let marinate for about 10 minutes before serving
